The Very Best Blue Cheese Dressing

DEAR SOS: I need a recipe for a good blue cheese dressing.

DEAR NANCY: Certainly. Here’s a simple, classic version that I like.

BLUE CHEESE DRESSING
1/2 cup mayonnaise
1/3 cup crumbled blue cheese or Roquefort cheese
2 tablespoons oil
1 tablespoon vinegar
1 tablespoon half and half
1/4 teaspoon salt
Dash black pepper

Combine mayonnaise, cheese, oil, vinegar, half and half, salt and pepper in bowl. Beat until smooth with rotary or electric beater.

Makes 2/3 cup.
Each 1-tablespoon serving contains about:
78 calories; 191 mg sodium; 6 mg cholesterol; 7 grams fat; 3 grams carbohydrates; 1 gram protein; 0 fiber.
